Apple cake – steamed, not baked

How about some delicious apple cake for your table to celebrate this day? This recipe is courtesy my little sister, Dhanashri Joshi who is a fabulous cook.

To make this steamed apple cake, you’ll need:

3 apples
7 tbsp of Atta (whole wheat flour)
2 tbsp of Suji (rava / semolina)
5 cups of sugar
3 tbsp butter
2 cups milk
2 tsp ghee (clarified butter)
1/2 tsp Baking powder

Here’s how you prepare this delicious dish:

1. Take ghee in a pan add atta and suji and fry together on a low flame till the mixture starts giving out a faint aroma. Turn off before atta starts turning brown. Keep it aside and let it cool.
2. Next, add butter, sugar, milk and 1 washed-peeled apple in a mixer/blender and mix well till it becomes a smooth creamy runny mixture.
3. Add this to the atta and mix well till there are no lumps. You can also use the mixer/blender to ensure you have an even smooth creamy and lump free batter. The batter should not be too thick or too runny.
4. Now wash and peel the remaining 2 apples. Cut them into small cubes and add these to the batter.
5. In a small bowl put baking powder and 1 tsp milk and mix well.
6. Grease a steel bowl with butter and pour the cake mixture it it.
7. Add the baking powder mix. Stir clockwise twice.
8. In a pressure cooker take enough water to submerge the little round disc that comes with it.
9. Place the bowl with the cake mix on top of the disc. {You can also use any other utensils that support double boiler arrangement for steaming}
10. Now remove the whistle and put the lid.
11. Steam for 45 minutes while adding water inside the cooker after every 10 minutes.
12. Garnish with pomegranate seeds and serve with LOVE.
