I don’t know if it’s only me or people from India. When it rains, the temperature plummets down, skies turn gray – I think of chai-pakora. Tea and Fritters. For so many days when it rained heavily in Nashville I pestered my friends that we should have tea – pakoras. But being calorie conscious people they didn’t want to give in to the idea easily. Not to be deterred, I kept pestering till they finally relented. And we had a pakora party right here in Nashville.
Recipe for this is simple:
– Mix together 1 portion of besan (gram daal flour), 1/4 portion sooji (semolina) with finely chopped onion, finely chopped green chilly, a tsp of coriander powder, finely chopped coriander, red chilly powder and salt to taste. Add water and make a thick batter.
– Deep fry in oil to golden brown. Sprinkle with char masala and serve hot with tea, ketchup, chutney.
We made onion and potato fritters (shown above) and also a batch of spinach ones. They were ultimate. Spinach ones were so good none were left for the photograph!
