Cheat recipe for Uttappam and chutney

I made these several months ago, but for some reason they stayed on my computer. Thought I’ll share these today. This is a “cheat” recipe – does not use authentic ingredients etc, but it is good enough for a quicky. And delicious for sure!

You’ll need:

For Uttappam

– Sooji(semolina) 2 cups

– Chopped veggies – tomato, onion, peppers, some cilantro and a couple green chilies

– 1 cup tart yogurt.If yogurt is not tart, add some salt to it and leave it in a warm place for about couple hours before using it.

– Water

– Salt to taste

– Oil

For Chutney

– 1 cup Hummus

– 2 tbsp coconut powder

– 1 tbsp coconut milk

– Salt and red chilly powder to taste

– For spluttering (tadka): 1 tsp oil, mustard seeds, split black gram (dhuli urad daal), split gram (chana daal), curry leaves, a pinch of asafetida

Preparation:

– For uttappam mix all ingredients together to the consistency of pancake batter. Set aside for 1 hour.

– While it getting ready, prepare chutney.

– Mix all chutney ingredients except the tadka items. Adjust salt, chilly powder and add a little water, if needed. Final consistency should be like a dip.

– In a small pan heat oil and to it add rest of the ingredients.

– Once they splutter and the grams turn golden brown, add the hummus mixture to it and immediately turn the heat off. Mix well and transfer to a separate bowl.

For uttappams:

– Stir the mixture thoroughly.

– Heat a girdle or a non-stick shallow frying pan and lightly grease it with oil. I’ve found that even when using a non-stick pan, it is good to grease it lightly at least in between 2 or three uttappam.

– Spread the batter like pancake and cook on both sides till fully cooked.

– Serve hot with a little chutney, may be some Indian pickle and lots of love.
